Ingredients

    DRY INGREDIENTS:
    1/2 cup white or whole grain flour
    1/2 cup old fashioned oats
    1 tsp baking powder
    1 tsp baking soda
    1/8 tsp salt
    WET INGREDIENTS:
    1 cup mashed bananas
    1/4 cup applesauce
    1/4 cup sugar
    3 tbs egg substitute or 1 large egg white
    1 tsp vanilla extract

Tips

If anyone bakes this as a loaf of banana bread please tell me how it goes! Also if yogurt works instead of applesauce? May add nuts, chocolate, peanut butter, cinnamon, or other toppings, just don't forget to add the extra nutritional value.


Directions

Preheat oven to 350 degrees. Spray a muffin pan or use liners. Combine ingredients in a bowl. Bake for about 15-20 minutes or until golden brown.

Serving Size: Makes 12 muffins
