Ingredients

    2 lge Eggs, beaten
    1 sprig Shallots, sliced
    Tomato, diced very small
    Green Capsicum, diced very small
    Yellow Capsicum, diced very small
    Red Capsicum, diced very small
    cup Tasty Cheese, shredded
    Sprinkle All Purpose Seasoning or Salt & Pepper

Directions

1. Heat non-stick frypan
2. Mix all ingredients together
3. Pour all ingredients into heated frypan
4. Cover and cook under egg looks set
5. Fold one side over the other and serve
