Ingredients

    4 cups Rice Krispies (can substitute some or all with Cheerios or crushed, unsweetened corn flakes)
    3 cups oats, instant and/or old fashioned
    1/2 cup pecans (or other nuts)
    1/2 craisins (or other dried fruit)
    1/2 cup honey
    1 cup brown sugar
    1/2 cup corn syrup (or honey or maple syrup)
    1/2 cup peanut butter (or other nut or seed butter)
    1/2 cup coconut oil
    1 tsp almond flavoring (or other such as vanilla)
    salt

Tips

* you can increase the fruits and/or nuts up to 1 cup extra. if you want to add more, decrease amount of cereal.

* this is a lactose-free recipe

* this is a gluten-free recipe if you use the right kind of cereal

* You might want to cover the bottom of the cookie sheet with a silpat or foil to make removal easier. Wax paper doesn't work!

* Most people don't notice that there is peanut butter in this recipe. If you want a peanut butter taste, substitute more peanut butter for the coconut oil (add after boiling sugars).

* This makes a lot of bars, so feel free to cut the recipe in half and use a 9x13 pan instead of a cookie sheet.

* To boost the flavor, consider toasting the oats as your first step. Simply melt 2-3 tablespoons of coconut oil or butter in your pot on medium heat, then throw in the oats. Cook, stirring very frequently, for 5 - 7 minutes.


Directions

Mix cereal, oats, nuts, and dried fuit in a bowl. You may want to cut up fruit into smaller bits first.

On stove, mix honey, brown sugar, corn syrup and coconut oil over medium heat. Stir continuously. Let it boil for about 30 seconds before taking it off the heat. (boiling should look kind of foamy.) Stir in peanut butter and almond flavoring.

Pour into dry ingredients and mix. Dump onto cookie sheet and spread out to cover entire sheet. Press down with oiled fingers or bottom of a cup. Sprinkle with a small amount of salt (or more if you like salty granola bars). Once cooled, remove from cookie sheet and cut into bars. I make 35 by cutting 5 rows and cutting each row into 7 bars.

Serving Size: Makes about 35 granola bars (1.5 x 3 inches each)
