Ingredients

    Mix together using a whisk together well:
    2 cups Egg Substitute
    8 large eggs
    1/4 cup half & half
    1/2 tsp ground nutmeg

    Add to egg mixture after whisking eggs until well blended:
    1/4 cup crumbled Feta cheese

    Chop up:
    4 Frozen sausage patties (Jimmy Dean turkey sausage)
    1/2 med size onion (white, yellow or red)
    6 baby portabella mushrooms diced or sliced
    1/3 cup bell pepper (red, yellow, orange or green or combo)
    1/2 cup broccolli small pieces
    1/2 cup zuchini small pieces
    1/2 tsp Himalayan Pink salt
    1 tbsp extra virgin olive oil
    1 tbsp butter or smart balance
    1/2 tsp red pepper flakes (optional)

    4 cups of fresh baby spinach
    1/2 cup shredded Mozzarella cheese
    1/4 cup Italian 4 cheese blend

    If you like you could sprinkle sweet basil or italian seasonings over the top of the Frittada.

Directions

Serving Size: 8
Preheat oven to 350 degrees.
Large skillet (12-14 inches diameter)

In large non-stick skillet on med-high melt 1 tbsp butter and 1 tbsp extra virgin olive oil, add in 1/4 tsp red pepper flakes. Add onions and salt and saute for 1 minute then add sausage and other veggies. Stir occasionally for about 2 minutes then add baby spinach and let it wilt down. Once Spinach is wilted add egg mixture to the pan and stir the veggie mixture into the eggs. Sprinkle over the top with Mozzarella cheese and Italian 4 cheese blend and then place in the center of the oven. If you like you could sprinkle sweet basil or italian seasonings over the top of the Frittada.

Bake for 20 - 25 minutes until firm in the center and then put under broiler for 3 to 5 minutes until cheese on top is brown to your desired level. Remove and let cook for about 5 minutes. Makes 8 servings.
