Ingredients

1 cup natural peanut butter
3/4 Swerve
1 egg
1 tsp. vanilla extract
1/2 cup almond flour
1/4 tsp. salt
1 tsp. baking soda
Directions
Preheat the oven to 375 degrees. Line a cookie sheet with parchment paper.
Mix the peanut butter, Swerve, egg, and vanilla extract. Add the almond flour, salt, and baking powder. Stir until thoroughly mixed.
Divide dough into four portions/ Create nine 1" balls from each portion (36 in all). Place on parchment and press flat with fork tines, bottom of a glass, or damp hand.
Bake for 10 to 12 minutes or until the edges are slightly brown. Allow to cool a few minutes before transferring to a wire rack.
