Introduction

This is a filling and nutritious meal that I package up for a week of at work lunches. It's a great substitute for a frozen microwave meal and it's much more hearty and filling. Ingredients

    bagged coleslaw mix, black beans, teriyaki sauce, soy sauce, sweet bell peppers, zuchini, brown rice, sesame oil, garlic cloves

Tips

Add salt, pepper, garlic powder and any other seasoning you like. I like to add curry seasoning to mine to spice it up


Directions

Saute Garlic in Sesame oil on medium heat for 20 seconds, add a can of black beans and stirs for 1 minute, add veggies, soy sauce and teriyaki sauce and cover on low to medium heat. Stir occasionally until veggies are soft and cooked. Serve over brown rice.

Serving Size: 1/4 of stir fry over half a cup of brown rice
