Ingredients

    Sweet Red Pepper 1 medium, chopped
    Sweet Yellow Pepper 1 medium, chopped
    Tomato 1 medium, seeded and chopped
    English Cucumber, chopped
    Zucchini 1 small, chopped
    Scallions 2, chopped
    Parsley Fresh 2 Tbsp., minced
    EVOV 2 Tbsp.
    Red Wine Vinegar 1 Tbsp.
    Sugar 1/2 tsp.
    Salt 1/4 tsp.
    Pepper Black 1/4 tsp.
    Avocado 1 large, peeled and chopped
    Lemon Juice 1 Tbsp.

Tips

Chop the vegetables in any size you like. I did a large chop. Add more veggies if you want.


Directions

In a large bowl, combine the first seven ingredients. In another bowl combine oil, vinegar, sugar, salt, and pepper and whisk until blended. Drizzle over vegetables and toss to coat. Toss avocado with lemon juice and then add to vegetables. Serve with a slotted spoon.
