Introduction

Ingredients

    2 chicken breasts - cut into 1 inch pieces
    1 med. yellow onion sliced thin
    1 inch of ginger root diced fine
    1 lg. clove of garlic diced fine
    2 cups of ripe red tomatoes (1 can of no salt can be used too)
    Olive oil, 2 tsp
    2 cups of milk (could use a bit more if the curry gets dry)
    2 potatoes - cut into 1 inch pieces
    1 tsp sea salt
    1/2 tsp black pepper
    1/2 tsp red hot pepper
    1/2 tsp cumin seed
    shake of tumeric
    6 whole cloves
    1 1/2 heaping tbsp ground coriander

Tips

Use your tomatoes to get all the hot spices off of the pan before adding the milk.
Tastes best for leftovers.

Directions

Heat oil and add onion. When translucent add all the spices except salt and heat until spices have gotten really hot...2 - 3 mins. Add tomatoes and then milk. Add chicken (cut into 1 inch pieces) and potatoes (cut into 1 inch pieces). Cover and heat on medium for about 35 - 45 mins. Serve with brown rice.
