Ingredients

    3 T coconut (or peanut) oil
    4 T butter
    2 T Wondra™ flour
    2 T brandy
    about 1/4 c finely sliced or diced mushrooms
    about 1/4 c cooked green peas
    1 c whole milk (or cream)

Tips

easy on the brandy!
could also use white wine


Directions

Cook peas and hold.
Saute mushrooms in oil and butter.
Remove and set aside.
Deglaze any pan bits with brandy.
Add Wondra™ flour and stir to form roux.
Add milk to watery consistency, and add reserved veggies.
Simmer, stirring, to desired thickness.

Serve over seafood or chicken, etc.
