Introduction

A great pasta salad to have with grilled chicken or just by itself for lunch. A great pasta salad to have with grilled chicken or just by itself for lunch.
Number of Servings: 8

Ingredients

    1 Box of Whole Wheat Pasta (I love Fusilli)
    1 Entire Container Light Greek Salad dressing
    1 Cup Chopped Red Onion
    2 bags of Frozen Peppers and Onions or you can use fresh (4 cups)
    8oz Cups Grape Tomatoes (cut in half)
    8oz Feta Cheese
    1 14oz Can of Black pitted Olives

Tips

Add grilled chicken for some extra protein
Always lightly toss this salad when serving, the dressing may fall to the bottom.


Directions

Cook an entire box of pasta according to the instructions on the box.

Strain the pasta and immediately throw in frozen peppers to defrost and cool down the pasta. Stir occasionally until peppers are all defrosted

Add in chopped red onions, grape tomatoes and black olives and dressing into a large bowl. Toss everything together.

Add feta cheese and lightly toss to avoid the feta cheese from crumbling too much

Refrigerate for at least an hour. Serve cold.
