Ingredients

2 Tbls. Olive Oil
1/2 onion chopped
1 Tbls. Minced Garlic
4 slices provolone
1 1/2 cups Tomato Puree (can sub-statute nsa paste)
1/2 cup shredded parmesan
1/4 tsp. salt
1/4 tsp. black pepper
12 oz. chicken breast (about 3oz. each)
1/2 cup Frozen spinach thawed and squeezed of all excess water
toothpicks or kitchen twine
Tips
For easy tomato puree ... cook in batches and freeze ... better and healthier than store bought!
Directions
1. Add 1 Tbls. oil to small sauce pan; add onion and garlic and sauté until fragrant. Add tomato puree, salt and pepper on med high heat for one minute; Add parmesan cheese reserving small amount for garnish. Simmer on low until melted and smooth.
2. Cut chicken breasts into 4 individual pieces (about 3 oz each) pound to 1/4 inch thickness between two pieces of plastic wrap. Place one slice of provolone over one chicken breast piece, add 1/4 of spinach; roll pinwheel style and secure with a toothpick (or kitchen twine) repeat for remaining chicken breasts.
3.Grease baking dish with remaining oil; Add chicken breasts and cover with tomato sauce; Cover with foil and bake at 350 degrees for 25 minutes; uncover and bake for additional 25 minutes.
Sprinkle reserved cheese and serve!
