Introduction

Ingredients

    1 1/2 cup all-purpose flour
    1 cup sugar
    1 tsp cinnamon
    1/2 tsp baking powder
    1/2 tsp baking soda
    1/2 tsp salt
    1 egg
    1 cup mashed banana
    1/2 cup applesauce
    1 tsp vanilla
    1 cup shredded zucchini
    1/2 cup chopped walnuts (optional...not included in nutrition info)

Tips

I use the following ingredients as a substitute for each egg: 2 Tbls flour, 1/2 Tbls shortening, 1/2 tsp baking powder, 2 Tbls milk


Directions

In a large bowl, comine the first 6 ingredients. In a small bowl, beat the egg, bananas, oil and vanilla. Stir into dry ingredients just until moistened. Fold in zucchini (and walnuts). Fill 12 muffin cups. Bake at 325 degrees for about 25 minutes, or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pan. Yield: 12 muffins.
