    1 3/4 cups 1/2% milk
    3 large eggs
    1 bunch asparagus, chopped
    1/2 cup chopped onion
    1/2 roasted red pepper, chopped
    6 T. shredded parmesan cheese
    garlic powder and black pepper to taste
    smoked paprika


In nonstick skillet, saute onions in 1/2 tsp. of olive oil until translucent. Add asparagus and saute until barely tender. Add red pepper, and garlic powder and black pepper to taste. Pour into pie plate and distribute evenly.

Beat eggs well. Add milk. Pour over asparagus mixture. Top with parmesan cheese. Bake in a 375 degree oven for 50 minutes until top is golden and eggs are set. Sprinkle with paprika... smoked paprika is best.

Serves 4. Great for breakfast!
