These burritos are a great way to start a busy day. Just grab from the freezer and nuke for 1-2 minutes. These burritos are a great way to start a busy day. Just grab from the freezer and nuke for 1-2 minutes.

Ingredients

    8 slices Jalapeno Bacon, chopped
    12 red potatoes, shredded
    1 red bell pepper, diced
    12 large eggs
    1/2 cup salsa
    2 ounces mozzarella cheese
    20 whole wheat tortillas

Tips

Add seasoning to the potatoes to enhance flavor (I used garlic salt and pepper, which is not included in the nutritional facts).


Directions

1. Cook bacon until desired crispness. Set aside to drain.

2. Fry potatoes in bacon fat until desired crispness (about 10 minutes). Set aside to drain.

3. Saute bell pepper in bacon fat. Scramble eggs with some salt and pepper. Add eggs to pan. After about 5 minutes, add salsa and cheese.

4. Once cheese is melted, stir in bacon and potatoes.

5. Place 1/3 cup egg mixture on each tortilla and roll into burritos. Wrap each burrito in plastic wrap and place in gallon freezer bags (I used 2). Freeze until ready to eat.

Serving Size: Makes 20 burritos (1/3 cup filling in 1 tortilla)
