Introduction

Ingredients

    3 Chicken Breast halves, skin and bone removed- diced
    1 medium onion chopped
    2-3 stalks celery
    3 cloves garlic-minced
    1 medium can corn
    1 medium can black beans
    1 small can mushrooms
    1 medium can diced tomatoes
    1 Jar Pace Lime and Garlic Verde (this makes the recipe so a substitution will not taste the same)

    Salt and Pepper to taste and I like a little Cumin and Paprika.

Tips

These canned goods are ususally kept as staples in my pantry. This is a great "throw-together", healthy dinner that makes good leftovers, too. Enjoy!


Directions

I use my Pampered Chef deep dish covered baker in the microwave so this dish is prepared and cooked in 30 minutes. If you don't have the baker:
In a large frying pan or dutch oven on the stove:
Saute the chicken, onion, garlic in coconut or canola oil until no longer pink inside. Add all other ingredients and simmer until flavors have combined and celery has softened a bit. Serve over rice or with a bit of shredded cheese.
