-
I banana
1 orange
14 or more grapes
20 blueberries or more
mint leaves
1 tsp baking soda
1.5 cups wholemeal flour
1/2 cup unsweetened almond milk
1 tsp cinnamon
1 tsp vanilla essence
Tips
You can add strawberries to this, I used grapes because I had them at home.
Directions
An easy recipe for banana berry muffins (or whatever berries you have at home)
Start by mashing the banana in a bowl, add the vanilla essence and cinnamon.
Squeeze the juice of the orange into the mixture to make it wet, add some of the pulp if you like.
Add the grapes, berries and mint to the mixture.
Add the baking soda and wholemeal flour, keep mixing.
The mixture will go a bit dry, this is when you add some milk until a sloppy consistency.
You can add sugar if you like, or an egg but I left it out.
Mix in the mint leaves - optional.
Put mixture into well greased muffin tins, i used coconut oil to grease mine.
Bake in pre-heated 180 degree oven for 15-20 minutes.
Enjoy
