Introduction

Ingredients

1 medium head cauliflower, cut into florets
3 cups vegetable stock
1 medium yellow onion
1 medium green bell pepper
2/3 c. marinara sauce
4 cloves garlic, minced
2 tbsp EVOO
2 tbsp Italian seasoning
16 oz pasta of choice
Salt & pepper to taste
Directions
1. Chop all vegetables. Keep separate and set aside.
2. Boil 2 quarts salted water and cook past until just under al dente. Keep warm and set aside.
3. In a medium saucepan, combine vegetable stock and chopped cauliflower. Heat to boiling, then cover and turn down to simmer. Continue to cook until very soft, about 10-12 minutes. Remove from heat and blend with an immersion blender (or in batches in a blender) until very smooth. Pour in marinara and blend well, heat for five minutes on low, or until hot.
4. In a 10" skillet, heat oil on medium until shimmering, add onion, green bell pepper, and Italian seasoning. Sauté until the onion is just translucent (6-7 minutes), add garlic and cook until very fragrant, a further 2-3 minutes.
5. Combine all ingredients together, with 2-3 tablespoons of pasta water to help sauce stick to pasta.
Serve hot & enjoy! 8 servings
