Introduction

Ingredients

1/4 Cup Balsamic Vinegar
2 Tablespoons Olive Oil
1 Tablespoon Honey
3 Tablespoons Lemon juice
3 Tablespoons Garlic, chopped
1.5 pounds boneless, skinless chicken breast
Tips
I make several batches when chicken is on sale and freeze each batch in a quart size ziplock freezer bag, this makes for a quick easy dinner some time in the future.
Directions
1. Slice chicken breasts horizontally into two or three pieces each, this makes them thinner and eaiser to cook and manage.
2. Mix together all ingredients except chicken.
3. Pour over chicken and marinate overnight or longer.
4. At this point you can choose your cooking method. I like to cook in a nonstick pan over medium high heat with cooking spray or a little bit of oil. My husband likes to grill the chicken. You can even choose to broil the chicken.
Leftovers make great lunch sandwiches or pannis and are great on salads
