Directions

You will need an iron skillet. Heat the iron skillet to medium heat (5-6). Add 1 Tbsp vegetable oil to skillet. Put Rice in microwave for 10 minutes. Wisk 3 large eggs, pour eggs into the iron skillet, let cook like a crepe. While that cooks chop 2 stakes of celery, cutting celery length wise first. This should give you 1/2 cup. Chop up a quarter of a sweet yellow onion. Be sure to check the eggs and flip if it has set. If it has set remove and set aside. If not take out 1 lean pork chop trim and chop up the same size as celery. This will help everything heat and cook the same. (Make sure pork chop is already cook prior to starting ex. left overs.) Remove eggs and let set. Add celery and onions into same skillet with 1 Tbsp of unsalted butter. Cook until softened. While that is cooking, drain the rice put into large bowl. When vegetables are softened add meat to middle of skillet by pushing vegetables to outer edge of skillet. Then pour rice into skillet, and 3 Tbsp of soy sauce over rice. Stir all together sprinkle 2 tsp of sesame oil over mixed rice. Roll up flared cooked eggs (like a crepe) and slice eggs into long strips. Pour that onto of the mixed rice. Put lid on and lower temperature to low (1-2). Cook for 15 minutes. Serve as is or in bowl.
