Ingredients

    2 plum tomatoes
    1 teaspoon olive oil
    1 (7-inch) thin-and-crispy pizza crust
    3 oz fresh mozzarella cheese, thinly sliced
    1⁄4 cup torn fresh basil

    1⁄2 (10-oz) package chopped romaine lettuce
    1⁄2 cup sliced cucumber
    1⁄4 cup sliced red onion
    1 1⁄2 tablespoons olive oil
    1 tablespoon fresh lemon juice
    1⁄4 teaspoon salt, 1⁄8 teaspoon pepper

Directions

Preheat grill to medium-high heat. Slice
tomatoes, and drain on paper towels while grill
preheats. Brush oil over crust. Arrange tomato
and cheese slices over crust. Place pizza on a
grill rack coated with cooking spray. Grill
covered with grill lid, 5 to 7 minutes or until
cheese melts. Sprinkle with basil. Cut into 4
slices. Serve 2 slices per serving.

Note: Instead of grilling, bake pizza at 425°F
for 12 minutes, if desired.

Combine lettuce, cucumber and onion in a
large serving bowl. Drizzle salad with oil and
lemon juice; sprinkle with salt and pepper. Toss
well. Divide into 2 servings, and serve with
pizza.
