Introduction
Delicious gluten free gumbo fresh from the Louisiana coast. My hubby adapted his family's traditional recipe to accommodate my gluten intolerance. DELICIOUS!!!Gumbo is a traditional Cajun/Louisiana meal and is usually made in LARGE batches. At our house, my hubby makes a gigantic pot that sits slow simmering on the stove all weekend and our friends and family help themselves whenever they get hungry. Great food solution for our teenage son and his friends who seem to always be at our house and are ALWAYS hungry. LOL. Enjoy :) Delicious gluten free gumbo fresh from the Louisiana coast. Ingredients

3/4 cup oat flour
1/4 cup quinoa flour
1/2 cup corn oil
12 oz BLSL chicken thighs (chopped into bite sized pieces)
2 link pork & venison smoked sausage (chopped into bite sized pieces)
4 tbsp minced garlic
1 med onion, chopped
Salt/Pepper/Tobasco, as desired
Tips
Commonly served over rice with crackers on the side. My hubby also adds a couple shakes of Tobasco for some heat.
Directions
Saute' flours in screaming hot skilled or pot using corn oil. This is making your roux (soup base). Continue cooking roux until it reaches your preferred darkness (darker roux=stronger flavor).
One the desired color is achieved,add 3 quarts of water, garlic, onions, chicken, and sausage. Bring to a boil. Simmer for 1-2 hours until ready to serve. Season to taste with salt and pepper.
