Ingredients

    12 peeled, hard boiled eggs
    5 tablespoons mayonnaise
    2 tablespoons southwest spicy mustard
    1/2 medium onion, chopped
    Salt and pepper to taste

Directions

Mash hard boiled eggs in a mixing bowl. Add mayonnaise and mustard, then stir. Add chopped onion, and salt and pepper. Refrigerate for at least 1 hour before serving.
