Ingredients

1/2 cup softened butter
1/2 cup sugar
1/2 cup brown sugar
1 egg
1/2 tsp vanilla
1/3 cup smooth peanut butter
1 cup Cloud 9 Gluten-Free All-Purpose Baking Mix
1/2 tsp baking soda
1/4 tsp salt
1 cup rolled oats
3/4 semi-sweet chocolate chips
Tips
Delectable when drizzled with a peanut butter glaze made from 1/2 cup peanut butter, 1 cup icing sugar and 6 tbsp milk. This is not included in nutritional breakdown.
Directions
1. Cream the butter and sugars. Add the peanut butter, egg, and vanilla and cream again.
2. Sift together the flour, baking soda, salt, and oats. Add to the creamed mixture and beat on low until mixed in.
3. Spread in a greased 9x13 glass baking dish. Sprinkle with the chocolate chips. Bake at 350 degrees for 20-22 minutes. Let cool before serving.
