Ingredients

    8 oz chicken breast, boneless, skinless, diced in
    2 cups string beans, washed, ends cut, cut in 2-inch pieces
    2 cups Bokchoy, washed, thinly sliced
    3 cloves garlic, peeled, crushed and minced fine
    1/2 medium yellow onion, thinly sliced
    2-3 Tbs Hoisin Sauce
    1-2 Tbs low sodium soy sauce
    1 Tbs fish sauce (optional)
    1/4-1/2 cup water
    2 Tbs Olive oil

Tips

When stir frying on med-hi to high heat, stir frequently to prevent food from sticking or burning. Since this dish is an almost dry dish, stir in a small amount of water each time.


Directions

Heat 1 Tbs Olive Oil in non-stick pan or wok on med-hi heat. Add diced chicken and brown. Place cooked chicken in a bowl and set aside.

In same pan, heat remaining 1 Tbs olive oil. Add garlic and green beans. Cook until green beans are crisp tender, 5-7 minutes. Stir frequently to prevent sticking and burning the garlic.

Add the cooked chicken, hoisin sauce, low sodium soy sauce and optional fish sauce. Stir frequently for 3-5 minutes. This dish is an almost dry dish, so only add a bit of water at a time to prevent sticking and/or burning.

Add the bokchoy and onions and stir fry an additional 1-2 minutes. Add a bit of water to deglaze the pan and create a small amount of sauce-enough to coat the food. Remove from heat.

Serve over brown rice.
