Introduction

This quiche is very quick and easy to make. The hardest part is chopping all the veggies, but a food processor could make that easier. Change the heavy cream to half & half, and use reduced fat cheese for a slimmer version. This quiche is very quick and easy to make. Ingredients

    1 9" ready to bake frozen pie crust (organic, if possible)
    5 large eggs (organic, pasture raised are best)
    1 cup heavy cream or half & half
    2 tsp of oil to saute veggies in
    2.5 cups chopped vegetables of your choice (I have calculated the recipe with 1/2 cup of each onion, mushroom, spinach, zucchini and broccoli)
    4 oz of cheese in small cubes (I used Beecher's flagship)
    Salt, pepper, garlic, etc... to taste

Tips

I made a full fat version of this (heavy cream and Beecher's flagship cheese) for my dad, who is trying to gain weight, but it is just as delicious with half&half and low fat cheese, or different types of cheese, should you be wishing for the lower calorie version. This recipe is so easy to mix up and customize. Make it with spinach, bacon and swiss cheese, or broccoli and cheddar... it is infinitely adaptable!


Directions

- Chop the vegetables finely and saute them in oil until they are soft. Add salt, pepper, garlic and other spices to taste.
- Mix eggs and cream in a blender until smooth
- Pour egg mixture into frozen crust
- Add sauteed vegetables into the mixture
- Drop cubed cheese in and gently stir to spread the fillings around in the egg mixture
- Put in 400 degree oven for about 40 minutes... or until the center doesn't giggle when gently shaken.
- Cool on a wire rack for about 10 minutes before serving, so the egg doesn't separate.
