Ingredients

    1/2 pound ground turkey
    1 tbsp. diced yellow onion
    1 ½ tsp. minced garlic
    ½ tsp. oregano
    ¼ tsp. sage
¼ tsp. red pepper flakes (you can use paprika instead for milder flavor)
    ¼ tsp. ground black pepper
    ¼ tsp. salt
Cooking spray or Olive Oil Spray

Tips

Uncooked patties can be stored in your freezer for one month and refrigerator for 3-4 days if layered in wax paper or cellophane, and kept in an airtight container. Cooked patties in an airtight container can be kept frozen for 3 months.
Optional: Meat mixture can be used as a substitute for pork sausage or made as ground sausage versus making a patty shape. Ground sausage can be used in omelets or spaghetti sauce as well.

Directions

In a bowl, combine turkey, onion, garlic, oregano, sage, red pepper flakes (or paprika), black pepper, and salt. Use a fork or clean hands, mix all ingredients together well. Separate your meat mixture into four equal portions. Roll each portion into a ball. Place each ball individually between two pieces of wax paper or cellophane wrap, flatten balls into patties.
Mist a fry pan or electric skillet with cooking spray or olive oil. Heat skillet on medium high until a water droplet will sizzle when added to pan. Place patties in the pan and cook for 2 minutes on each side, or until center of patty is no longer pink. If patty is browning faster than the center is cooking, turn your heat down to medium.
