Introduction

Number of Servings: 4

Ingredients

    1 lb zucchini or squash (about 2 medium)
    1/4 c panko breadcrumbs
    1/4 c parmesan cheese, shredded
    1 tbsp olive oil
    1/4 tsp kosher salt
    fresh ground pepper (to taste)

Directions

Heat oven to 400 degrees and line two baking sheets with foil. Spray the baking sheets with cooking spray. Slice zucchini or squash into 1/4 inch thick rounds. Toss them with the oil, coating well. In a wide bowl or plate, mix the Panko, cheese, salt and pepper. Place the rounds into the mixture, pressing each side into the mixture. They will not be completely covered, but should have a light coating on each side. Place the rounds on a single layer on the baking sheets. Sprinkle any remaining breadcrumb mixture on the rounds. Bake for 22-27 minutes, until golden brown.
