Ingredients

2 cups thinly sliced potatoes
3 thin slices of ontion
Duck Fat, 1 tbsp
Salt and Pepper to taste
Water (optional)
Tips
If potatoes are not cooking quickly enough, add about 1/2 a cup of water to the pan and place a lid on it for a few minute, remove lid and let water evaporate and continue cooking as above.
Directions
Melt duck fat in cast iron skillet (or use a fat of your choice but be aware this will flavour your potatoes so you want to use one you like the taste of)
Add potatoes and onion and seaon with salt and pepper
Fry potatoes, stirring frequently to avoid sticking until done.
Taste and adjust seasonings as needed

Because I didn't have the duck fat, I substituted salted butter, this recipe has been used by my wife's family for as long as I have known them and that's over 65 years. There usually is enough moisture in the potatoes, so adding water isn't necessary. Let it sit for a bit to brown before turning. - 11/25/18
