Ingredients

    1 medium head green cabbage, core removed, cut in small wedges
    5 potatoes washed and cut in wedges
    1 medium sweet onion cut in wedges
    3T EV Olive Oil
    2T Dijon Mustard
    2 Cloves garlic, minced
    1t pepper
    Salt to taste
    2t caraway seeds

Directions

Whisk together oil, mustard, garlic, pepper, salt and caraway. Brush over chopped veggies and place on rimmed baking sheet. Cover with foil and roast 45 minutes at 400. Remove foil and roast an additional 10 minutes
