Introduction
I love my grandson; hearing how he eats what are called 'chicken nuggets' in other venues, I'm dismayed, to say the very least. But...I'm not gonna force MY views on him. I just give him the choice of "Vegan" vs "NOT Vegan," and hope I'm making an impact upon his rationale. Be that as it may, as I said, the commercially-prepared nuggets aren't what I'd call good for you. So, I made these for the little guy. And, he loves them. Ingredients

16 oz chicken thigh meat; no bones, no skin
1/2 onion, red
1 clove garlic, peeled
3/4 tsp sea salt
3/5 tsp coarse black pepper
1 tbs nutritional yeast, Vegetarian Support Formula
Tips
Make a dip out of sriracha and mayonnaise, if you want, and try that fort a party. Or, maybe ketchup and curry. Or, ranch dressing. Maybe Buffalo wing sauce. I'm guessing; I eat no meat, so...have at it.
Directions
In a food processor, process onion and garlic until coarsely chopped. Add boneless, skinless thigh meat and other dry ingredients.
Pulse until finely chopped and uniform in texture. Here's where I use a #50 portion control scoop to make these come out to +/- 3/4 ounce. Flatten each ball slightly onto a parchment-lined baking sheet. Put the sheet into the oven at 350 degrees for 17 minutes, or until the nuggets temp out at 165 for AT LEAST fifteen seconds.
