2 cups chopped fresh broccoli
2 raw carrots, shredded
0.33 cup scallion greens, chopped
2 TBSP olive oil
4 cups chicken broth 99% fat free
4 cups milk 1%
One packet Broccoli Soup powder
Directions
finely chop broccoli, use a food processor to chop the broccoli stems.
Shred carrots (I used a potato peeler)
Chop scallion greens
Sauté veggies in olive oil till they sweat
Add Chicken broth and boil till veggies are soft.
Reduce heat and simmer till total cooking time is 30 min.
