Ingredients

    10 small potatoes
    2 cups diced zucchini
    5 French shallots
    4 cloves garlic
    Salt
    Pepper
    Dried thyme

Directions

Chop and roast the zucchini, while lightly searing the potatoes, brown the shallots and garlic, then add to the zucchini. Drizzle with olive oil, lemon, salt and thyme
