Ingredients

    Organics Vanilla Pudding and Pie Mix
    1 egg, well beaten
    2 cups of 2% milk
    almost one cup toasted unsweetened coconut
    Keebler Graham cracker pie crust.

Tips

I use the plastic liner for a lid. This pudding mix contains only sugar, cornstarch and vanilla. It seemed sweet enough even with the unsweetened coconut. If you need to add sugar you'll have to add calories.


Directions

Mix and cook pudding mix until it boils and thickens, add a bit to the well beaten egg. Pour that mixture back into the pan and cook until it is even thicker and the egg is fully cooked. Pour into graham cracker pie crust and refrigerate.
