Introduction
With lots of natural sweetness from dates and raisins, these bars are nicely balanced with salted, roasted nuts and spelt flour. They will be a hit at the potluck, or at the office! Ingredients

2 eggs
⅓ cup brown sugar
½ tbsp vanilla
zest of 1 lemon
zest of 1 orange
½ cup spelt flour
½ tsp baking powder
½ tsp salt
½ cup chopped, pitted dates
½ cup raisins
1 cup roasted, salted chopped nuts (your favourite kind or a mix - walnuts, almonds, hazelnuts and pistachios are all great)

Directions
Preheat the oven to 350F, line an 8” square pan
Beat the eggs in a large bowl until light.
Add the sugar, vanilla and citrus zests, beating well.
Mix in the flour, baking powder and salt until combined, then fold in the fruit and nuts.
Pour into the pan, smoothing the top.
Bake 35 minutes. Cool completely in the pan.
Serving Size: Makes one 8" pan, 16 pieces
