Ingredients

    1 lb Honeysuckle white Italian sausage
    600 grams red potatoes, sliced with skin (about 8 small potatoes)
    1 medium sweet onion, sliced
    1 Tbsp minced garlic
    1 Tbsp Italian seasoning
    Red pepper flakes (to taste)
    3 14 oz. cans vegetable broth
    1 Tbsp. Flour
    1 cup fat free sour cream
    1-4 cups fresh spinach or kale

Tips

To store soup, place in glass pint jars. Reserve spinach and add when reheating soup.


Directions

Brown sausage. Place in slow cooker. Brown onions then deglaze pan with vegetable broth. Place onions, potatoes, garlic, seasonings and vegetable broth in slow cooker. Cook 5-6 hrs. On low, or 3-4 hours on high until potatoes are fork tender. Stir flour into sour cream. Slowly add to soup, stirring to prevent lumps. Cook for another 15 min as soup thickens slightly. Add fresh spinach just before serving.
