Introduction
The delicious taste of cranberry orange muffins, captured in a bite-size morsel. These bites remind me of my mom's cranberry orange muffins, a staple at Thanksgiving dinner. Made with oatmeal, nuts, flax and chia seeds, these gluten-free bites are as healthy as they are delicious! The delicious taste of cranberry orange muffins, captured in a bite-size morsel. Ingredients

1.5 cups oatmeal
1 cup dried cranberries
1.5 cups pecan halves
1/8 tsp. cinnamon
1 TBSP white chia seeds
2 TBSP flax meal
1 TBSP molasses
1 TBSP raw honey
2 TBSP Orange Juice
Tips
*Using gluten-free oatmeal will make these gluten-free!*
You can increase the honey and proportionally decrease the molasses if you want a sweeter bite.
Directions
In a food processor, grind oatmeal until it is a coarse meal. Dump into a large bowl. Grind cranberries into small pieces. Dump into same large bowl. Grind pecan halves into small pieces. Dump into same large bowl.
Add cinnamon, chia seeds and flax meal to large bowl. Give it a light stir, and transfer back to food processor. Pulse a few times to mix ingredients.
With the food processor running, slowly add molasses, then honey, through the food chute. Ingredients will begin to form a "dough". Following the same process, slowly drizzle in orange juice until ingredients form a ball of "dough".
Transfer "dough" into the large bowl. Roll into 1 inch bites and place on a small cookie sheet. Transfer to freezer for 10 minutes.
Store in an air tight container in the fridge. Will keep for up to two weeks in the fridge.
