Ingredients

    PASTRY
    1 1/2 cups Wholemeal Flour
    3/4 tsp Baking Powder
    90 grams Butter
    Cold Water, to mix

    FILLING
    Olive oil for pan, approx 1 tsp
    1 Onion
    1 cup cooked Spinach
    150 g Reduced Fat Feta
    1/4 cup finely grated Parmesan Cheese
    3 Eggs
    1 cup nonfat Milk

Directions

Preheat oven to 190C fan. In a medium bowl mix flour, b.p. & salt. Rub in cold butter quickly until mixture is like fine breadcrumbs. Stir in enough cold water to make stiff dough. Knead briefly then roll pastry out to line a 20cm flan dish. Freeze for 10 mins to chill then prebake for 10-15 mins.

Heat oil in pan and cook onion until very soft. Stir in spinach and scatter mixture over prebaked pastry base. Sprinkle over feta and parmesan. Beat together the eggs and milk, season and pour over other ingredients.

Return to oven and cook for 35-40 mins until set. Serve warm with Salad.
