Introduction

I've adapted the recipe from the Looneyspoons Collection book -- the original calls for mild sausage, but I like spicy, zucchini (which I switched for celery and spinach) and croutons instead of buns but I used what I had and loved it. Ingredients

    2 whole grain dinner rolls or hamburger buns
    227g spicy italian sausage
    1 stalk celery, diced
    1 cup spianch, diced
    1/2 cup minced onions
    1/2 cup diced red bell pepper
    1 cup packed shredded old cheddar cheese
    3 eggs
    5 servings egg whites (instructions on the packet for how many tablespoons equals one egg; or substitute for 5 more full eggs)
    1/2 cup cream
    1/2 cup 1%milk
    salt and pepper

Tips

The original recipe called for croutons instead of buns, so feel free to use them to add more flavour.

Pretty much any vegetables would be great in this, I think, so go with what you've got!

Easy, delightful and re-heats well.


Directions

Spray an 11x7 inch casserole dish with cooking spray. Tear up the buns into small pieces and spread evenly on bottom of dish before setting it aside.

Remove and discard the casing from the spicy italian sausage. Break or cut into small pieces and add to skillet, cooking until no longer pink and breaking up large pieces. Add celery, onions, and pepper and reduce heat, cooking and stirring for about 3 minutes (or until veggies start to soften).

Spoon sausage mixture over the torn up buns. Top with shredded cheese. In a bowl, whisk together eggs, egg whites, milk, cream and salt and pepper before pouring it evenly over the sausage and vegetables.

Let the strata stand for 15 minutes while you preheat the oven to 350F.

Bake, uncovered, for 40 minutes until eggs are set. Let stand 5 minutes before serving.
