Introduction

These were a bit more cakey than I had hoped but totally delicious. I sprinkled them with sea salt and more spices when I pulled them out of the oven. Ingredients

    3 Tbsp Coconut Oil
    3 Tbsp melted unsalted Butter
    1/6 c Brown Sugar, packed
    1/6 c Honey
    1/3 c Pumpkin puree (canned)
    1 large Egg
    1 tsp Vanilla Extract
    1/3 c Oat Flour
    1/3 c Almond Flour
    1/3 c Coconut Flour
    1/8 tsp Baking Powder
    1/8 tsp Baking Soda
    1 tsp Pumpkin Pie spice
    1/4 tsp Cinnamon, ground
    3/4 cup chocolate chips
    Pinch Himalayan Pink Sea Salt

Tips

If you don't have oat flour, take oats - preferrably steel cut - and grind in coffee grinder or processor until a flour like texture is achieved.


Directions

Preheat oven to 350 degrees F. Cream together the oil, butter, sugar, honey and pumpkin puree. Sift together the flours, baking powder, baking soda, and spices. Beat the egg and vanilla into the pumpkin mixture. Slowly add in the dry ingredients, mix. Fold in the chocolate chips. Scoop onto parchment lined cookie sheet and bake for about 10 minutes.
