Ingredients


    1 lb lean stew meat, in small pieces
    1 onion, chopped
    2 cloves garlic chopped
    32 oz low sodium beef broth
    32 oz water
    1 can whole tomatoes, low sodium
    2 stalks celery, diced
    1 cup carrots, half moons
    2 cups diced red potatoes, peeled
    2/3 cup frozen peas
    2/3 cup frozen corn

Directions

Brown beef in olive oil. Season as desired with salt, pepper, garlic powder, onion powder, creole seasoning, or other desired seasonings. Add onion and garlic for 2 minutes. Add broth and water. Simmer 45 minutes. Add tomatoes and celery and simmer 15 minutes. Add carrots and simmer 10 minutes. Add potatoes, corn and peas and simmer 20 minutes or until all veg are tender.
