Introduction

This is an easy low calorie slow cooker version of a family favorite with a twist. This is an easy low calorie slow cooker version of a family favorite with a twist.

Ingredients

    1 tbsp apple cider vinegar
    Ground turkey, 93% lean, 24 oz
    1 leek, sliced
    3 medium carrots, sliced
    1 tbsp red or cayenne pepper
    5 cups prepared mashed potatoes
    1/4 cup shredded cheddar cheese

Tips

Add a small amount of chicken broth if you will be leaving this longer to ensure that it does not stick.


Directions

Brown the ground turkey, sliced leeks, and pepper until turkey is browned and leeks have softened. Spoon into the bottom of the slow cooker; layer the sliced carrots evenly on top, then add the mashed potatoes. Cook on low 4-6 hours. Just before serving, sprinkle the cheese on top.

Serving Size: Makes 8 servings, approx. 1 cup each
