Ingredients

    1.5 lbs lean ground sirloin
    1 cup chopped onions (1 medium onion, chopped)
    1 cup dry medium grain brown rice
    1 cup canned crushed tomatoes or chunky tomato sauce
    1 cup frozen peas
    1 cup diced potatoes (1medium potato, 1/4" dicd)
    2 cloves garlic or 1/2 tsp garlic powder
    1/2 teaspoon each cinnamon, tumeric, ginger
    1.5 tbsp curry powder
    Adobo seasoning or salt and pepper to taste
    3 cups water

Tips

White rice adds about 10 calories per serving.
Substitute canned diced or crushed tomatoes (1-2 cups) or chunky tomato sauce (1 cup plus 1/2 c water) if you don't have fresh tomatoes in the house.


Directions

Brown ground sirloin in pan with onions until browned.
Add tomatoes, potatoes, rice, lentils, 3 cups water, and spices along with salt and pepper to taste.
Bring to a simmer and cook for 25 minutes or unti rice is fully cooked. Add peas near the end of cooking to retain more color and flavor.
Add additional water if it becomes too thick. It should have the consistency of chili.
