Introduction

Ingredients

    1.5kg white potatoes, floury
    2 onions
    425ml chicken stock
    2 tbsp olive oil

Tips

Make these, up to pouring the stock over, the day before. Place another gratin dish of similar size and shape on top - the aim is to compact the potatoes. Put it in the fridge overnight. The next day you should be able to cut it into portions or even cut out shapes with a cookie cutter before baking for super-neat presentation.


Directions

Pre-heat oven to 180C.

Peel the potatoes and slice them, and the onions, thinly. A mandoline is useful if you have one.

Oil a 1.5 litre gratin dish. Make a layer of potatoes on the bottom, then onion, then potatoes. Repeat until all ingredients are used, ending on potatoes.

Pour the stock over the top.

Bake for 50-60 minutes, until the top is golden and crisp.
