Ingredients

    5 # boneless beef chuck roast
    one red and one sweet onion, quartered
    5 red potatoes, peeled and quartered
    1# carrots, peeled and halved - 2" sections
    one can beef gravy
    one can beef consomme
    one small can tomato paste
    couple of bay leaves

Tips

We don't eat the onions - used only as a base under the roast - so they're not included in the nutrition info.


Directions

Prepare veggies.
Sear roast on all sides; remove from crockpot.
Place quartered onions in bottom, then potatoes.
Add a couple bay leaves.
Replace roast on top.
Pour over consomme, gravy, and tomato paste.
Dump carrots on top.
Cook on high for about 5 hours, then reduce to low and continue until it's falling apart.
