Ingredients

    1 cup quinoa, cooked (1/2 C dry)
    3 tablespoons pumpkin puree (not pumpkin pie filling!)
    1 teaspoon cinnamon
    1.5 teaspoons pumpkin pie spice
    6 ounces vanilla yogurt

Tips

I topped with a bit of granola for some extra crunchy texture. I used vanilla yogurt for this, but plain nonfat yogurt is my preference can also be used for less sugar and fat, and fewer calories.

I cooked a whole cup of quinoa before I realized that I needed half that amount for this recipe. I went ahead and mixed it with the rest of the can of pumpkin puree and spices, and will be able to eat more parfaits for the rest of the week!


Directions

Mix cooked quinoa, pumpkin puree, cinnamon, and pumpkin pie spice until well combined. Layer the pumpkin mixture and yogurt. Garnish with granola or chopped apple. (Not included in nutrition calculation.)

Serving Size: makes one serving.
