Ingredients

    2 (6.3 oz) packages Gorton's Classic Grilled Salmon Fillets
    1/3 cup zucchini, julienned
    1/3 cup carrot, peeled and julienned
    1/3 cup red bell pepper, julienned
    1/3 cup napa (or Chinese) cabbage, thinly sliced
    4 green onions, thinly sliced
    2 Tbsp rice vinegar
    2 Tbsp reduced sodium soy sauce
    2 tsp fresh ginger, finely grated
    1/2 tsp sesame oil
    1/4 to 1/2 tsp Sriracha hot sauce
    4 whole wheat sandwich or hamburger rolls, lightly toasted

Directions

Prepare Gorton's Classic Grilled Salmon Fillets according to package instructions.

In a large bowl mix together zucchini, carrot, bell pepper, cabbage and green onion.

In a small bowl, whisk together vinegar, soy sauce, ginger, sesame oil and hot sauce.

Add vinegar mixture to vegetables and toss to combine. Divide mixture evenly on each roll bottom and top with a cooked salmon fillet. Add the roll tops and serve.


Serving Size: Makes 4 servings

    This is something that I enjoy eating , but I avoid both slices of the bread and eat it opened face and leave out the soy sauce to lower the sodium use. I love to use Mrs. Dash salt-free spices instead for a different taste. - 1/8/15

    VERY timely!! Had salmon for dinner last night...now have leftovers! Going to make the coleslaw with the salmon included, and serve as sandwiches. As we have someone here who "does NOT do vinegar", will be substituting some Orange Juice Concentrate....
