Introduction

Number of Servings: 6

Ingredients

    1-2 lb. 93% ground beef or turkey depending upon how meaty you want your chili
    1 cup chopped bell pepper
    1 cup chopped onion
    1 cup chopped celery
    1 cup chopped carrots if desired
    2-3 tablespoons olive oil
    1-2 cans northern bean
    1-2 cans kidney beans
    2, 14 ounce cans diced tomatoes. You can omit 1 can and use 1 cup salsa or rotel tomatoes if you want it spicier.
    2 packages chili seasonings
    1 tablespoon garlic powder
    3 t. dry taco seasoning
    1-2 tablespoons sugar if you want it really mild.
    1 large can tomato juice

    You can top with cheese, sour cream, or crackers when done. Enjoy!

Tips

I use low salt products for the tomatoes, chili seasoning, and taco seasoning. You may need to adjust the beans and meat if you want more or less.


Directions

Place the meat in one pan and cook until done. In another pan cook the celery, pepper, onion and carrots until they are have softened a little. They shouldn't be crunchy or mushy after they have cooked

Take the meat and place it in crockpot or soup pan. Rinse the beans in a strainer and add. Then add the vegetables, tomatoes/salsa. Add the garlic, and seasonings, then stir to coat the ingredients. Add the tomato juice and sugar if desired. You may need to stir the mixture around so everything gets some juice on it.

Cook for 5-6 hours on low in a crockpot

Cook the chili on low for 5-6 hours on the stove or in a crockpot.

You can top with cheese, sour cream, or crackers when done. Enjoy!
