Ingredients

    3 eggs at room temperature, coconut milk, honey, coconut oil, vanilla, cashews (or macadamias), coconut flour, baking soda, sea salt, blueberries

Tips

if you don't have a high-speed blender, grind the nuts in a food processor first. it may take a bit longer to blend, and you may have to use a spatula to scrape the batter down the sides of the jar to mix thoroughly.


Directions

preheat waffle iron to lowest setting

place all ingredients in order listed, except blueberries in high-speed blender.

Blend on low for 30 seconds, increase speed to high and continue blending until the batter is completely smooth, about another 30 seconds.

Spoon the batter into the waffle iron, filling halfway and spreading evenly. sprinkle a handful of blueberries over the batter.

close the lid and cook for 45 seconds to 1 minute, until the steam stops rising from the machine and the waffles easily release with a fork. keep them in a warm oven while you finish making the rest of the waffles.
