Ingredients

    32 OZ cubed butternut squash
    1 small onion
    1 tsp olive oil
    1/3 cup butter
    salt
    pepper

Directions

Lightly sauté the onion in the oil. Use some of the butter to butter the bottom of casserole dish. Put the cubed squash into casserole dish with salt and pepper and sautéed onion. Dot with the butter. Put in 400 degree oven for 30 minutes.
