Number of Servings: 4


    1/2 c. Eggplant, sliced and diced into small pieces
    1/2 c. Squash (yellow or zucchini), sliced and diced
    1/2 c. Mushrooms (baby portabella) diced
    1 dash Black Pepper
    1 dash Salt (Season all)
    1 tbs. Olive oil
    4 small Flour Tortilla (Fajita style)

    Any other vegetable may be diced and added to your liking. This recipe is one that I have found has a lot of flavor and is quick and easy to make and fills you up.


Make sure you don't over cook veggies. Keep them slightly crisp for added crunch and flavor.


Slightly heat olive oil in a medium to large skillet. Add Eggplant and mushrooms first. Sautee for a 1 to 2 minutes on medium heat. Add remaining ingredients. Cook until all veggies are soft (but not mushy). Remove from heat and set aside.

Lightly oil each Tortilla and add to pan, on medium heat allow each tortilla to lightly brown.

Serve veggies on tortilla.

Serving Size: Makes 4 Fajitas
